Philippe Pacalet is without a doubt THE winemaking star of our times. He definitely takes after his family. Nephew of Marcel Lapierre, around whom he took his first steps, and an oenologist by training, he has devoted himself to the art of natural vinification. He thus offers us here a beautifully crafted Corton-Charlemagne Grand Cru. The Chardonnay that it is made from has been carefully cultivated by winemakers whose work is supervised and recognised as organic, or at least inspired by organic practices. At the same time, it must be acknowledged that this noble grape variety has benefited from a climate which is ideal for it to flourish (an oceanic climate with a semi-continental influence) and has drawn its distinction from within limestone and marl soils which are renowned throughout the world.
In the cellar, the work is very careful. Native yeasts trigger the fermentation process and sulphur is only used in homeopathic doses. Made for a long cellaring period – up to 20 years depending on the vintage – the wine is revealed to have a pale golden colour crisscrossed with glints of green. This exudes aromas of white fruits, citrus, exotic fruits, flint, bracken and honey. Powerful, dense and fresh at the same time, it is an exceptional example of balance and nobility.
